Mushroom Green Curry

A bowl of Thai green curry a day will keep your spicy food cravings at bay! Packed with umami flavor and totally vegan (for a lower carbon footprint), our hearty mushroom green curry comes together in a flash on those busy weekdays! This dish is perfect for a cold evening, best served with rice. Use any mushrooms of your choosing but we highly recommend shimeji mushrooms.

Simple and Easy Green Curry with Mushrooms

Ingredients:

(Serves 2)

  • 1 1/2 cup mushrooms of your choosing (we used shimeji and shiitake)
  • 1 tbsp cooking oil
  • 1.5 cup coconut milk
  • 1 cup water
  • 2-3 tsp Mekhala Organic Green Curry Paste
  • Salt
  • Cilantro (for garnishing)

Method:

  1. Heat oil in a heavy based pot. Add mushrooms and stir fry for about 3 mins.
  2. Add Mekhala Organic Green Curry Paste and coconut milk and water. Bring to a boil, lower heat and simmer for 7-10 minutes. If too dry, add more water.
  3. Season with salt to taste.
