Vegetarian BBQ Skewers with Red Curry

Next time you get invited to a BBQ and you want to make your meat lovers’ friends jealous of a vegan meal, try these Twisted BBQ Skewers – they are irresistible – we promise. You can pair the skewers with your favorite salad, coleslaw, or even some mash for a fulfilling meal.

Ingredients for the Skewers:
14oz/397g of firm tofu (Optional: you can also make this dish using tempeh)
Any veggies of your choice (we love using asparagus, mushrooms, and red bell peppers.
Scallions, sesame seeds, and Fresh red chillies (for garnishing)

Ingredients for the BBQ marinade:
1 can (6oz/170g) of tomato paste /Tomato ketchup
2 teaspoons of Mekhala Organic Red Curry Paste (oh you’ll love it!)
1 teaspoon of Apple cider vinegar
1 tablespoon of Honey
¼ of a lemon squeezed
Salt & Pepper to taste

Method:
1. Drain the water from your tofu and chop it up into bite-size pieces. See tips section.
2. Make the marinade by combining the tomato paste with 2 teaspoons of Mekhala Organic Red Curry Paste, apple cider vinegar, lemon juice, and honey, mix well.
3. Add the tofu to the marinade and let sit for at least 1 hour.
4. Skewer the marinated tofu and veggies of choice alternately.
5. Place the skewers on the hot grill. Alternatively, you can fry them in a frying pan.
6. Grill until golden brown.
7. Serve, garnish and enjoy!

Tips:
To get dry tofu, remove the excess water from the tofu when removing it from the pack. Place it between 2 dry paper towels, place a baking tray or a heavy pan onto it, and leave it for 20 minutes. The more water you drain, the crispier your tofu will be.
