Yummy and Tangy Tom Yum Honey Glazed Carrots Recipe
Ingredients (Roasted Carrots):(Serves 2-4 pax)
- 8 to 12 Dutch/rainbow/heirloom Carrots
- Olive or other vegetable oil
Ingredients (Sauce):(Serves 2-4 pax)
- 1 tsp honey
- 1 tsp Mekhala’s Organic Tom Yum Paste
- 1 tbsp olive or other vegetable oil
- Salt & pepper to taste
- 1 tsp roasted white sesame seeds (Optional)
Method:
- Preheat oven to 375°F/190°C.
- Toss and coat carrots with olive or vegetable oil, and roast in the oven for 15 to 20 minutes.
- Prepare the sauce by mixing the honey, Mekhala’s Organic Tom Yum Paste, olive or vegetable oil, salt, and pepper.
- Drizzle sauce over roasted carrots.
- Sprinkle roasted sesame seeds to serve.Enjoy!
Tip: For an extra twist, you can swap out the carrots for sweet potatoes or parsnips. Also, add a squeeze of lime juice for even more tang!
