Egg and Smashed Avocado Sandwich with Crispy Onions
Serves 1-2

Ingredients:

  • 2 large eggs (preferably organic/free range)
  • 2 slices sourdough bread
  • Ripe Avocado
  • Cherry tomatoes, halved
  • Chopped chives (optional)
  • Mekhala Crispy Onions of choice (We used Sichuan Hot Pepper Crispy Onions)

 

Method:

  1. In a pan, fry the eggs to your preference.
  2. Meanwhile toast bread and spread avocado on toast.
  3. Add fried egg and tomatoes.
  4. Sprinkle with chives and Mekhala Crispy Onions of choice.
