We love finding new ways to spice up our leftovers, and our latest creation is this great recipe for leftover roast chicken.
Our Spicy and Crunchy Sichuan Mala Chicken Sandwich is like making a sandwich with Chili Crisp but without the oil. Leftover roast chicken pieces are smothered in Mekhala’s mouth (and eye) watering Sichuan Mala Chilli Paste and mayonnaise, cradled in crisp lettuce, and flanked by fresh tomato and sourdough bread slices.
Don’t forget the secret ingredient – Mekhala’s new Umami Seaweed Crispy Onions!
Crispy and Spicy Sichuan Mala Chicken Recipe!
Ingredients (Serves 1):
- 2 slices sourdough bread, toasted
- Leftover roast chicken
- Mayo
- Tomato
- Lettuce (or salad) leaves
- Mekhala Organic Sichuan Mala Chilli Paste
- Mekhala Umami Seaweed Crispy Onions
Method:
- Slice 2-3 pieces of tomato, salt lightly and set aside.
- Squirt some mayo in a bowl, add 1-2 tbsp of Mekhala Organic Sichuan Mala Chilli Paste, mix well. Shred in some leftover roast chicken and mix well.
- Lay down one piece of toasted bread. Layer on tomato, lettuce, spicy mala chicken mix and sprinkle on Crispy Onions of choice. Top with a second slice of bread.
- Cut the mala chicken sandwich in half for serving and enjoy!
