During this Covid-19 business, my favorite Chinese food restaurant hasn’t been accessible. I’m not sure if it was open but it’s a drive since we moved and a welcome treat occasionally. In the middle of the night the cravings would come. I looked up recipes without knowing what even goes into my favorite (spicy shredded chicken is a little non-specific and it’s a family place so probably a proprietary recipe).I found so many spicy recipes and the only thing I knew for sure was 2 am is the worst time to have a craving. Also, they all seemed to call for some form of chili paste.In Texas, look up chili paste at your local grocery store and you can make one heck of a five alarm chili, but unless you can go in and browse Amazon is the way to go.I put this and a few other things I remembered seeing in recipes in my cart and fired off an order. This is the one we tried first. (We have used beef every time so it wouldn’t go bad but I want to try this with chicken)It is nothing like my favorite! It is its own kind of good. It needed a squeeze of lemon and chili flakes so we did that on the second batch and it brightened it up a bit because it’s for sure a paste.Only complaint about this is that there are big peppercorns in it that don’t get soft. It wasn’t so obvious for the first batch. I bought another six pack of it because I wasn’t a fan of the other stuff I got.This paste has heat and tastes great! I am beyond excited to get back to my favorite food, but this is really helping.

Good condiment- a new favorite
I love this stuff. I live in a small town in the Midwest so finding a variety of spices isn’t exactly the easiest. I got a recipe for Szechuan noodles and went online and found this. Since then, we’ve probably had noodles once a week. It’s just that tasty. This is very much a use amount as needed sauce. I make the whole pot with just a tablespoon of this paste to 8 tbsp of sweet soy glaze. It adds just the right amount of heat for my more sensitive husband. I add another dollop to my own bowl to give it more kick for my own liking. I also appreciate how easily it mixes in. If I’m stirring it into the soy glaze or my own noodles, it stirs in and incorporates super easy without big chucks which is nice. The peppercorns are soft and tender and not disconcerting when you have one in a bite. I could easily see tossing a little in a wide variety of dishes- dressing, crema, chili. I’m a big fan and will be making this a staple in our kitchen.

You have to stir before using
When i first received and tried this product, I was very disappointed. But it turns out that all the spices are sunken into the middle or bottom, so stir a bit or reach your spoon deeper to get the spices. It tastes pretty good after stirring. The company has amazing customer service, too.

Almost like the real thing!
I am a huge fan of this Ma La paste! I was initially skeptical given that it is vegan but was very surprised to find out that this small container packs a powerful punch of flavor and heat! It’s almost as good as the real Ma La flavors that you get from Szechuan restaurants. Some might argue that it lacks salt but I prefer it that way because I can easily adjust the saltiness of the paste myself by….adding more salt or soy sauce ???? I would still recommend adding additional garlic and shallots to heighten the tastes but overall, a very good paste and I HIGHLY recommend this to those who love Szechuan food.

Quality Szechuan Paste!
I purchased this to remake a Hello Fresh meal that called for Szechuan paste. This stuff is much more spicy, maybe just a condensed version! A little goes a long way!
