Sichuan Mala Lemongrass Ribs

What’s tingly, tasty and a total cinch to prepare? Made by combining Mekhala’s spicy, numbing Organic Sichuan Mala Chilli Paste and Vietnamese-inspired, citrusy Organic Lemongrass Turmeric Paste, this oven-roasted recipe is full of wholesome ingredients that’ll ramp up your ribs game.

Sichuan Mala Lemongrass Ribs
Serves 2-4



  1. Combine Mekhala Organic Sichuan Mala Chilli Paste, Mekhala Organic Lemongrass Turmeric Paste, and cooking oil in a small bowl.
  2. Coat ribs in marinate and leave to marinate covered and/or in the fridge for at least 2 hours, ideally overnight.
  3. Preheat oven to 320F / 160C. Lay ribs out on a foil covered pan without overlapping, and cover in foil.
  4. Roast in oven at 320F / 160C for 1.5 hours.
  5. Finally, turn the heat up to 355F / 180C and roast for another 15 minutes.

Tip: Check if your ribs need a top-up brush of oil before the final leg.
