Healthy and Tasty Lemongrass Turmeric Fruit Crepes
Ingredients (Serves 2 pax):
- 3 tbsps vegan butter
- 1 cup all purpose flour
- 1/2 cup vegan milk, room temperature
- 1/2 cup water, room temperature
- 2 vegan egg substitute
- Pinch of salt
- 2 tsps Mekhela Lemongrass Turmeric Paste
- Fruit compote
- Vegan cream or ice cream
Method:
- Melt butter in a small saucepan and set aside to cool.
- 2. Combine cooled, melted butter, flour, milk, water, egg substitute, salt, and whisk or blend together. Chill batter in the fridge for 30 minutes.
- 3. Cook the crepes by spooning 2 to 3 tablespoons of batter to a buttered pan on medium heat. Make sure to spread the batter out as thinly as possible!
- 4. Spread Mekhala Lemongrass Turmeric Paste thinly on cooked crepes and serve with fruit compote, chopped thyme, and a scoop of vegan cream or ice cream.
