Lemongrass Turmeric Fruit Crepes
Here’s one for the kids! Our taste-testers loved these crepes so much they gobbled everything up in a flash. A great way to introduce complex flavors to young taste buds.
Ingredients:
(Serves 2 pax)
3 tbsps vegan butter
1 cup all purpose flour
1/2 cup vegan milk, room temperature
1/2 cup water, room temperature
2 vegan egg substitute
Pinch of salt
Fruit compote
Vegan cream or ice cream
 
 
Method:
  1. Melt butter in a small saucepan and set aside to cool.
  2. Combine cooled, melted butter, flour, milk, water, egg substitute, salt, and whisk or blend together. Chill batter in the fridge for 30 minutes.
  3. Cook the crepes by spooning 2 to 3 tablespoons of batter to a buttered pan on medium heat. Make sure to spread the batter out as thinly as possible!
  4. Spread Mekhala Lemongrass Turmeric Paste thinly on cooked crepes and serve with fruit compote, chopped thyme, and a scoop of vegan cream or ice cream.
  5. Enjoy!
