Delicious Barbecued/Roasted Lemongrass Turmeric Fish Recipe
Ingredients (Serves 4-6):
- 2 large whole fish (sea bass, snapper), gutted and scored
- 2-3 tbsp Mekhala’s Organic Lemongrass Turmeric Paste (or any of our pastes you fancy!)
- 1 tbsp Mekhala Organic Roasted Chilli Sambal Paste (optional)
- 1 tbsp oil
Method:
- Marinade fish in a mixture of the 2 pastes for 30 minutes.
- BBQ till crisp brown and cooked or roast in 200C oven for 25-30 min.
- While the fish is cooking on the BBQ or in the oven, baste it occasionally with a little bit of the marinade or some melted butter to keep it moist and enhance the flavors.
- Once cooked, serve the lemongrass turmeric fish hot with a sprinkle of fresh herbs like cilantro or mint, and a squeeze of lime juice for a burst of freshness. Pair it with a side of steamed jasmine rice or a light salad for a complete, balanced meal.
