Ingredients (Serves 4-6):

Method:

  1. Marinade fish in a mixture of the 2 pastes for 30 minutes.
  2. BBQ till crisp brown and cooked or roast in 200C oven for 25-30 min.
  3. While the fish is cooking on the BBQ or in the oven, baste it occasionally with a little bit of the marinade or some melted butter to keep it moist and enhance the flavors.
  4. Once cooked, serve the lemongrass turmeric fish hot with a sprinkle of fresh herbs like cilantro or mint, and a squeeze of lime juice for a burst of freshness. Pair it with a side of steamed jasmine rice or a light salad for a complete, balanced meal.
