A hearty, lip-smackingly delicious salad for the perfect weekend lunch!
Ingredients:
(Serves 2)
1 Tbsp extra virgin olive oil
2-3 Large yellow nectarines, pitted and quartered
1-2 Cups salad leaves of choice
85g/3oz Goat’s cheese of choice*
Handful pistachio kernels
2-3 Tbsp Mekhala All-Natural Plum Sauce/Dressing/Dip
*Omit for a vegan version of this delicious salad
Method:
- Brush the nectarine wedges with olive oil. Grill the wedges on a barbecue or a hot grill pan over medium-high heat until they’re nicely charred with grill marks on both sides (about 2-3 minutes per side).
- Arrange the salad leaves on your serving plate(s). Top with the nectarine wedges, crumble the goat cheese over and sprinkle the pistachios over. Drizzle over the Mekhala All-Natural Plum Dressing, and serve!
