Simple Coconut Pumpkin Chickpea Curry
Ingredients:
- 2 cups whole milk or coconut milk
- 3 tsp Mekhala Living Organic Yellow Curry paste
- 1 cup diced pumpkin
- 1 cup tinned chickpeas
- 1 cup chopped spinach
Method:
- To a pan, add 2 cups of whole milk or coconut milk.
- Add 3 tsp of Mekhala Living Organic Yellow Curry paste and stir till well-combined
- Add the pumpkin and simmer for 2-3 minutes
- Add the chickpeas and simmer for another 1-2 minutes
- Stir in the spinach
