Simple Coconut Pumpkin Chickpea Curry

  • To a pan, add 2 cups of whole milk or coconut milk.
  • Add 3 tsp of Mekhala Living Organic Yellow Curry paste and stir till well-combined
  • Add the pumpkin and simmer for 2-3 minutes
  • Add the chickpeas and simmer for another 1-2 minutes
  • Stir in the spinach
