We love soup because soups can be an appetizing starter or a delicious main meal mixed with some carbs. But most of all we love it because it makes rainy, cold or even gloomy days more delightful! This miso ginger soup recipe will definitely warm you up on the inside.
Light and Hearty Ginger Miso Broth Recipe
Ingredients (Serves 1pax):
- 2 tsp Mekhala Organic Ginger Miso Paste
- 7 fl.oz (200ml) stock of choice
- ½ cup silken tofu, cubed
- ¼ cup shimeiji mushrooms
- ⅛ cup green onion, sliced finely
Method:
- To make this ginger miso mushroom soup, heat stock in a pot over medium until simmering.
- Add in Mekhala Organic Ginger Miso Paste. Mix until combined.
- Add in tofu and shimeiji mushrooms. Simmer for about 10 minutes.
- After 10 minutes, add in green onion and simmer for about 30 seconds.
- Serve your hot miso ginger broth and enjoy!
Tip: You could also make a hearty chicken ginger miso soup by swapping out the tofu for chicken.
