Ma La Xiang Guo (Szechuan Fragrant Stir Fry)

Mala Xiang Guo is a Chinese classic and is super easy to make! Translated as “spicy stir-fry hot pot”, this fragrant and healthy dish can be eaten with rice or by itself. We’ve listed the ingredients that we used in our Mala stir fry, but feel free to sub in any vegetables, meats, or even noodles that you like (we’ve also listed some recommendations).

Tasty Mala Xiang Guo Recipe:

Ingredients

(Serves 4):

  • 1 handful of sliced lotus root, blanched in boiling water for about 40 seconds
  • 10 stalks of okra (aka lady’s finger), chopped or whole (based on preference)
  • 8oz bean sprouts
  • 8oz tofu, cut into bite sized pieces
  • 1 handful of sliced eggplant
  • 28oz chinese cabbage
  • 10oz enoki mushrooms
  • Coriander (cilantro) for garnish
  • 1 handful of peanuts
  • ¾ – 1 whole jar of Mekhala Organic Szechuan Mala Chilli Paste
  • 2 tsp cooking oil

Other Mala Xiang Guo ingredients you could use or switch out for:

  • Carrots
  • Shiitake mushrooms
  • Egg
  • Tofu skin
  • Wood ear mushrooms
  • Potatoes
  • Broccoli
  • Celery

Method:

  1. Heat a wok or deep pan at medium-high.
  2. Add oil and fry the hardest vegetables (lotus root, carrot, broccoli, potatoes etc) for about a minute.
  3. Add Mekhala Organic Szechuan Mala Chilli Paste and mix well.
  4. Add in the rest of the vegetables and fry until fully cooked.
  5. You may add a few tablespoons of water to help the Mala Xiang Guo sauce integrate better.
  6. Salt to taste.
  7. Take off heat and garnish with plenty of coriander (cilantro).
  8. Serve and enjoy!
