Grilled Portobello Mushroom Tacos


Perfect for Taco Tuesday!



2 large Portobello mushrooms, stems removed, cleaned, sliced into ½” slices

3 Tbsp olive oil

1 tsp red wine vinegar

¼ tsp smoked paprika

Dash or two of salt

Generous amount of pepper

4 Tbsp salted black beans

4 soft taco shells

1 small cabbage, shredded

4 Tbsp grated Cheddar cheese

Mekhala Plum Sauce



  1. Marinade the mushroom with the oil, smoked paprika, vinegar, salt and pepper) for 15 minutes
  2. Prepare grill for a medium heat. Once hot, place mushrooms slices on the grill. Grill for 4 minutes per side.*
  3. On medium heat, heat up the soft tacos for 30 seconds on each side
  4. To assemble tacos, layer cabbage, mushroom, beans and cheese in each taco. Top with Mekhala plum sauce and enjoy!
