A hearty, lip-smackingly delicious salad for the perfect weekend lunch!
1 Tbsp extra virgin olive oil
2-3 Large yellow nectarines, pitted and quartered
1-2 Cups salad leaves of choice
85g/3oz Goat’s cheese of choice*
Handful pistachio kernels
2-3 Tbsp Mekhala All-Natural Plum Sauce/Dressing/Dip
*Omit for a vegan version of this delicious salad
1. Brush the nectarine wedges with olive oil. Grill the wedges on a barbecue or a hot grill pan over medium-high heat until they’re nicely charred with grill marks on both sides (about 2-3 minutes per side).
2. Arrange the salad leaves on your serving plate(s). Top with the nectarine wedges, crumble the goat cheese over and sprinkle the pistachios over. Drizzle over the Mekhala All-Natural Plum Dressing, and serve!
