French-ish Style Potato Salad

This is the side dish that promises to steal the show. Tender potatoes dressed in a tangy wholegrain mustard vinaigrette, adorned with fresh herbs and crowned with Mekhala’s seasoned Crispy Onions for that perfect crunch. It’s a refreshing twist on a classic dish that promises to delight your taste buds!

Delicious French Potato Salad Recipe!

Ingredients (Serves 2-4):

  • Potatoes (preferably a waxy variety)
  • Wholegrain mustard
  • 1 Garlic clove, grated or finely chopped
  • White Wine Vinegar
  • Lemon juice
  • Olive oil
  • Shallot, sliced
  • Fresh soft herbs, eg dill and parsley
  • Salt and pepper
  • Mekhala Crispy Onions of choice (We used Umami Seaweed Crispy Onions)

Method:

  1. If you’re using larger potatoes, cut them into even pieces (roughly golf-ball sized or a little smaller). If using new/baby potatoes, leave them whole.
  2. Add potatoes to a pot of salted water. Bring to a boil and boil potatoes until tender.
  3. In the meantime, prepare the dressing: Whisk together wholegrain mustard, white wine vinegar, lemon juice, olive oil, salt and pepper until you get a nice emulsified dressing. Add shallots, chopped fresh herbs and mix well.
  4. When potatoes are done, drain well then add to the dressing. Mix well and check seasoning.
  5. Transfer to a serving plate and top generously with Mekhala Crispy Onions of choice.
