Delicious French Potato Salad Recipe!
Ingredients (Serves 2-4):
- Potatoes (preferably a waxy variety)
- Wholegrain mustard
- 1 Garlic clove, grated or finely chopped
- White Wine Vinegar
- Lemon juice
- Olive oil
- Shallot, sliced
- Fresh soft herbs, eg dill and parsley
- Salt and pepper
- Mekhala Crispy Onions of choice (We used Umami Seaweed Crispy Onions)
Method:
- If you’re using larger potatoes, cut them into even pieces (roughly golf-ball sized or a little smaller). If using new/baby potatoes, leave them whole.
- Add potatoes to a pot of salted water. Bring to a boil and boil potatoes until tender.
- In the meantime, prepare the dressing: Whisk together wholegrain mustard, white wine vinegar, lemon juice, olive oil, salt and pepper until you get a nice emulsified dressing. Add shallots, chopped fresh herbs and mix well.
- When potatoes are done, drain well then add to the dressing. Mix well and check seasoning.
- Transfer to a serving plate and top generously with Mekhala Crispy Onions of choice.
