Delicious and Flavorful Beef Yellow Curry Recipe
Ingredients:(Serves 2-4)
- 300gm beef shin or chuck, cut into large chunks
- 2-3 potatoes, skinned and cut into quarters
- 1 heaped tbsp Mekhala Organic Yellow Curry Paste
- 200ml coconut cream
- 400ml water
Method:
- In a casserole pot, heat up some oil and brown beef pieces. Remove and set aside.
- Add a little more oil and coconut cream. Fry for 1 min then add Mekhala Organic Yellow Curry Paste and stir through.
- Add water and return beef to the pot. Turn up the heat until curry is boiling, then cover with a lid, turn heat down to low and simmer for 45 min or until beef is almost soft.
- Add potatoes and simmer for another 30 min or until potatoes and beef are nicely done.
- Serve your yellow curry with beef on a bed of fragrant jasmine rice!
