Beef Yellow Curry

Delicious and Flavorful Beef Yellow Curry Recipe

Ingredients:(Serves 2-4)

  • 300gm beef shin or chuck, cut into large chunks
  • 2-3 potatoes, skinned and cut into quarters
  • 1 heaped tbsp Mekhala Organic Yellow Curry Paste
  • 200ml coconut cream
  • 400ml water

Method:

  1. In a casserole pot, heat up some oil and brown beef pieces. Remove and set aside.
  2. Add a little more oil and coconut cream. Fry for 1 min then add Mekhala Organic Yellow Curry Paste and stir through.
  3. Add water and return beef to the pot. Turn up the heat until curry is boiling, then cover with a lid, turn heat down to low and simmer for 45 min or until beef is almost soft.
  4. Add potatoes and simmer for another 30 min or until potatoes and beef are nicely done.
  5. Serve your yellow curry with beef on a bed of fragrant jasmine rice!
