Beef Yellow Curry

(Serves 2-4)
300gm beef shin or chuck, cut into large chunks
2-3 potatoes, skinned and cut into quarters
1 heaped tbsp Mekhala Organic Yellow Curry Paste
200ml coconut cream
400ml water

1. In casserole pot, heat up some oil and brown beef pieces. Remove and set aside.
2. Add a little more oil and coconut cream. Fry for 1min then add Mekhala Organic Yellow Curry Paste and stir through.
3. Add water and return beef to the pot. Turn up the heat until curry is boiling, then cover with a lid, turn heat down to low and simmer for 45min or until beef is almost soft.
4. Add potatoes and simmer for another 30min or until potatoes and beef are nicely done.
