Laksa is one of Singapore’s most beloved dishes — a fragrant, coconut-rich curry soup layered with the aromas of lemongrass, galangal, and spice. Traditional laksa paste is built on dried shrimp and shrimp paste, which means it’s off the table for vegans, those with shellfish allergies, and anyone avoiding seafood.
Mekhala’s version solves this without compromise. Dried seaweed replaces the seafood umami — delivering the same oceanic depth in a 100% plant-based form. Every other ingredient — lemongrass, galangal, red chilli, turmeric, kaffir lime — is USDA Certified Organic.

Sauté the Paste
Heat a splash of oil (or water for oil-free cooking) in a pot or wok. Add 2 tablespoons of Mekhala Vegan Laksa Paste. Sauté gently over medium heat for 60 seconds until the lemongrass, galangal, and chilli aromas bloom and fill the kitchen.

Add Coconut Milk & Stock
Pour in 400ml full-fat coconut milk and 300–400ml vegetable or mushroom stock. Stir to combine. The paste dissolves into a fragrant, amber-coloured laksa broth. Bring to a gentle simmer — do not boil hard or the coconut milk will split.

Add Ingredients & Serve
Add tofu, bok choy, mushrooms, or your choice of protein and vegetables. Simmer 5–10 minutes. Pour over soaked rice vermicelli noodles in deep bowls. Top with bean sprouts, fresh coriander, a lime wedge, and crispy onion. Serve immediately.
Laksa fried rice: Use 1 tbsp paste instead of fish sauce in your next fried rice. Fry cold rice in the paste for 3–4 minutes until fragrant and slightly crispy at the edges. Add scrambled egg or tofu, bok choy, and spring onion. Finish with a squeeze of lime. Tip: The paste also makes an excellent marinade for tofu or tempeh — press firm tofu, coat with 1 tbsp paste, and pan-fry until caramelised for a fragrant, protein-rich meal.

Paste vs. Sauce: This is a concentrated curry paste — not a ready-to-eat sauce. It needs coconut milk (or another liquid) to create the final dish. One jar makes 4–6 full curries when used at 1–2 tablespoons per serving.

For us the ingredient list was the deciding factor to try. At the supermarket and local asian stores the ingredients are soy oil and sugar based, none of the depth of flavor this paste has. Does Mekhala's Vegan Laksa paste contain shrimp, shellfish, or fish?
No. Mekhala Organic Vegan Laksa Paste contains no shrimp paste, no dried shrimp, no fish sauce, and no shellfish of any kind. It is 100% plant-based. The umami depth comes from dried seaweed, lemongrass, and galangal — not from seafood. It is one of the very few laksa pastes on the market that is genuinely vegan and shellfish-free.
Does Mekhala Vegan Laksa Paste contain soy?
No. This paste is completely soy-free. The ingredients are: shallots, rice vinegar, lemongrass, galangal, red chilli, dried seaweed, dried red chilli, Himalayan pink salt, turmeric, water, and kaffir lime leaves. No soy sauce, no miso, no tofu in the paste itself — making this one of the few curry pastes safe for those with soy allergies. It is also free from all other top-9 allergens (wheat, milk, eggs, fish, shellfish, tree nuts, peanuts, sesame).
What is the spice level?
Mekhala Organic Vegan Laksa Paste is rated Medium — 2 out of 3 on Mekhala’s heat scale. The paste contains both fresh red chilli and dried red chilli, giving a genuine, present heat. The spice is well-balanced — similar to a medium-spicy Thai curry — and is considerably milder than traditional Singaporean hawker-stall laksa. The creaminess of the coconut milk you add during cooking mellows the heat further, making it approachable for most chilli-tolerant palates.
What stock and coconut milk work best?
Full-fat coconut milk gives the richest, creamiest result closest to traditional laksa — do not substitute with light coconut milk if you want that characteristic body. For stock, vegetable stock is the most authentic vegan choice; mushroom stock adds extra umami depth. A good base ratio for a main-course soup is: 1 can (400ml) full-fat coconut milk + 300–400ml stock per 2 tablespoons of paste, serving 2–3 people generously.
What is galangal and how does it differ from ginger?
Galangal is a rhizome related to ginger but with a distinct piney, resinous, and peppery flavour profile. Where ginger is warm and slightly sweet, galangal is sharper and more aromatic — a signature note in Singaporean and Thai cooking, and absolutely essential to an authentic laksa flavor. It cannot be substituted with regular ginger. Mekhala uses organic galangal stone-ground into the paste so you never have to source it yourself.
Is Mekhala Vegan Laksa Paste keto or paleo-friendly?
Yes to both. The paste contains no refined sugar, no grains, and no seed oils. When prepared as a soup with full-fat coconut milk and low-carb vegetables such as bok choy, mushrooms, or cauliflower (instead of rice noodles), laksa is naturally keto-compatible and paleo-friendly. Substitute zucchini noodles or shirataki noodles for the rice vermicelli for a fully keto laksa.
How long does it keep after opening?
Refrigerate after opening and consume within 30 days. The vinegar and salt in the paste provide natural preservation, but refrigeration is essential once opened. For longer storage, freeze tablespoon-sized portions in an ice cube tray for up to 3 months — frozen paste can go directly into a hot wok or pot without defrosting.
