Ingredients
- 35g Mekhala Living Tom Yum Paste
- 2 tbsp oil
- 1 tbsp palm sugar
- 2 tbsp fish sauce
- 500ml water or vegetable stock
- 250g chicken breast or thigh, sliced into strips
- 300g mushrooms, halved
- 75g spring onions, roughly chopped
- 125g cherry tomatoes, halved
- 30–40ml fresh lime juice
- 30–40ml evaporated milk or coconut milk
- Fresh coriander, for garnish
Method
1. Prepare the Ingredients
- Slice the chicken into bite-sized strips or chunks.
- Wash and halve the mushrooms and cherry tomatoes.
- Roughly chop the spring onions and coriander.
2. Build the Flavour Base
Heat oil in a large saucepan or wok over medium heat. Add the Mekhala Living Tom Yum Paste and stir-fry gently for 2 minutes until aromatic.
3. Create the Broth
Add palm sugar and fish sauce, stirring well to combine. Pour in the water or vegetable stock and bring to a gentle boil.
4. Cook the Chicken & Vegetables
Add the chicken and simmer for 3–4 minutes until nearly cooked through. Stir in the mushrooms and cook for another 5 minutes.
Add the cherry tomatoes and spring onions, then simmer for 2 more minutes until slightly softened.
5. Finish the Soup
Turn off the heat and stir in the fresh lime juice and evaporated milk or coconut milk. Mix gently until the soup becomes creamy and fragrant.
Finish with fresh coriander.
Serving Suggestion
Serve hot on its own or pair with steamed jasmine rice for a heartier meal. For extra heat, top with fresh Thai chillies or chilli oil.
