Ingredients

– 12 oz pork shoulder or pork loin, sliced thin against the grain

Instructions

Step 1: Prep the pork
Slice the pork as thin as you can — about ¼ inch. Thinner slices sear faster and pick up more crust. Pat dry with a paper towel; moisture is the enemy of a good sear.
Step 2: Sear the pork
