Lemongrass Turmeric Roasted Chicken Hindquarters

Chicken is probably one of the most popular go-to proteins for most families. Which also makes it one of the harder dishes to jazz up. I can already hear the kids protesting – chicken again? We’ve got a couple of variations on the good ol’ roasted chicken hindquarters that have fast become mainstays on our dinner rotation. Because we all can use a spare trick up our sleeve. 😉

Lemongrass Turmeric Roasted Chicken Hindquarters Recipe

Ingredients:

Method:

    1. For the kid-friendly version, mix Mekhala Organic Lemongrass Turmeric Paste and cooking oil in a bowl. You’ll need approximately 1 teaspoon paste + 1 teaspoon oil per chicken hindquarter.
    2. If you prefer a bit of heat, combine 1 teaspoon Mekhala Organic Lemongrass Turmeric Paste and 0.5 Mekhala Organic Roasted Chilli Sambal Paste per chicken hindquarter instead. You can skip the cooking oil.
    3. Rub the mixture onto the chicken quarters evenly, and marinate for at least 1 hour.
    4. Preheat your oven to 390F/200C (or 385F/195C for fan-forced ovens).
    5. Roast chicken hindquarters in a pan for 40 minutes.
  • Your roasted chicken with lemongrass is done!

Tips:

  • The Airfryer is my favorite method for this lemongrass roasted chicken if you have one. Crispy on the outside, juicy on the inside, and much quicker too. Just 10 minutes at 375F/190C.
  • If you prefer more of a kick, up the proportion to 1 teaspoon Mekhala Organic Roasted Chilli Sambal Paste + 1 teaspoon Mekhala Organic Lemongrass Turmeric Paste per chicken hindquarter.
  • Use skin-on, bone-in chicken for the tastiest, juiciest results.
  • You can also rub the paste under the skin for even more flavor.
