Instant Pot Thai Yellow Beef Curry
Serves 4
Ingredients:
- 800gm beef chuck, cut into 2 inch cubes
- 350gm potatoes, peeled and cut into 2 inch pieces
- 600ml coconut cream or milk
- 2 tablespoons oil
- 4 teaspoons Mekhala Organic Thai Yellow/Massaman Curry Paste
- Chopped peanuts and coriander (optional)
Method:
- Set Instant Pot to Saute mode/High. When pot is hot, add oil and brown beef in batches.
- When beef is browned and in a separate bowl, turn the Saute mode off.
- Add coconut milk/cream and curry paste to the pot, stir to remove lumps.
- Return beef to the pot, put the lid on and set Pressure Cook High for 30min, allowing pressure to release on its own.
- Then add potatoes, set pressure cook high for 5 minutes, and do quick pressure release.
- Top with chopped peanuts and coriander.
