This ginger scallion fried rice has both warm and bright flavors, pairing perfectly with the umami flavor of a wok fried egg. A lip-smacking delight, this fried rice is a simple and yummy main or side that is done in 15 minutes. Opt out of the egg for a vegan version and replace with diced mushrooms or tofu.
Delicious Fried Rice Recipe with Ginger and Scallions
Ingredients: (Serves 1)
- 1/2 tsp cooking oil
- 7-8oz cooked rice
- 1 egg
- 7-8oz frozen diced vegetable mix (carrots, peas, corn)
- 2-3 tsps Mekhala Organic Ginger Scallion Paste
- Salt to taste
Method:
1. For your egg and scallion fried rice, add 1 tsp oil to a pan and fry rice for about 1-2 minutes, breaking apart the clumps of rice.
2. Add in frozen vegetable mix and fry for another 3-4 minutes.
3. Add in Mekhala Organic Ginger Scallion Paste and salt to taste. Fry for another 3 minutes until the paste is fully combined with the rice.
4. Remove from heat and serve your scallion ginger rice fresh!
