Easy Peasy Seafood Vindaloo

Ingredients:
- 1 pound/500g white fish fillets (barramundi, cod, snapper, flathead) or, salmon, trout or a mix of fish, prawns, calamari
- 75g frozen peas or 1 cup baby spinach leaves
- 2 teaspoons Mekhala Organic Vindaloo Paste
- 1/2 cup coconut milk
- 1/2 cup tomato puree
- Coriander and basmati rice to serve
Method:
- Add Vindaloo paste, coconut milk and tomato puree to a pot, stirring to combine.
- Add seafood and mix to coat in sauce.
- Cover and bring to a boil.
- Add frozen peas and stir until peas are heated through.
