Easy Peasy Seafood Vindaloo
Serves 2

Ingredients:

  • 1 pound/500g white fish fillets (barramundi, cod, snapper, flathead) or, salmon, trout or a mix of fish, prawns, calamari
  • 75g frozen peas or 1 cup baby spinach leaves
  • 2 teaspoons Mekhala Organic Vindaloo Paste
  • 1/2 cup coconut milk
  • 1/2 cup tomato puree
  • Coriander and basmati rice to serve

Method:

  1. Add Vindaloo paste, coconut milk and tomato puree to a pot, stirring to combine.
  2. Add seafood and mix to coat in sauce. 
  3. Cover and bring to a boil.
  4. Add frozen peas and stir until peas are heated through.
  5. Top with chopped coriander and serve hot with basmati rice.
